Choose Your Own Adventure Fried Rice
This is less a recipe and more of a guide on how to make amazing fried rice! Whenever you make rice for a meal, make extra and use it for fried rice the next day. Here are my steps for making the best fried rice.
Ingredients
Day old steamed rice (I am not putting exact measurements as the amount of rice you have will depend on how much is left. 2 to 4 cups)
Vegetable oil (or other oil) - 1 to 3 tablespoons
Garlic - 2 to 6 tablespoons
Ginger - 1 to 3 tablespoons
Green Onion - 2 to 6 green onions chopped (use half in the stir fry, reserve half for adding at the end)
Whatever Veggies sound good (shredded carrots, diced onions, shitaake mushrooms, frozen veggies or whatever veggies you have in the fridge)
Protein of your choice (leftover meats work well as does tofu, but you can also cook shrimp, chicken, beef, etc for your fried rice)
Sesame Oil - 1 to 3 tablespoons
Sugar - 1 teaspoon to 1 tablespoon
Korean Chili Flake - 1 teaspoon to 1 tablespoon
MSG - 1 teaspoon to 1 tablespoon
Eggs - 3 to 8 eggs, beaten
Toasted sesame seeds - 1 to 3 tablespoons
KREAM Kimchi - add as much as you'd like, throw in some juice, too
Choose Your Own Adventure Fried Rice
1. Use day old steamed rice. NEVER, let me repeat Never use freshly steamed rice. It's way too moist to make good fried rice.
2. Start with garlic and ginger - I have a mortar and pestle so I crush both together, but you can just as easily use a garlic press or dice the garlic and ginger til it's very fine. Put some vegetable oil or other oil into your wok or pan, cook on high, and cook garlic and ginger for about 3 minutes.
3. Throw in diced green onions and whatever veggies you want to add. I like adding shredded carrots, diced onions, shitaake mushrooms, and sometimes I add frozen corn and peas. Cook for another 3 minutes.
4. Add your protein (if adding protein) - I usually use leftover meat especially leftover Korean bbq. Other great options include shrimp, chicken, bologna, ground sausage, tofu, polish sausage, whatever you have on hand. If your protein is raw, you should cook in a separate pan. Add cooked protein into your veggie stir fry.
5. With your protein and veggies in the wok, I like to add some sesame oil, and then throw in the rice. Add soy sauce (or tamari), sugar, korean chili flake, and MSG (if you are not scared of this amazing add on). Stir everything in the wok to blend everything evenly.
6. Scramble or fry your eggs in a separate pan. This way, you won't overcook the eggs. If scrambling the eggs, you can incorporate them in after they are mostly done. Fried eggs, you can add after you have plated the fried rice.
7. Add fresh, chopped green onions and toasted sesame seeds each bowl of fried rice.
8. While I love kimchi fried rice, I like to add the kimchi and kimchi juice to the finished fried rice since cooking kimchi kills the probiotics. KREAM Kimchi goes incredibly well with fried rice!
