Kimchi Carbonara with Spam
I only started making carbonara at home recently and I had the thought of adding kimchi when I make it again! I did and it was delicious! I then had the thought of replacing pancetta with spam as spam is the country cousin of the Italian cured meat This is that recipe! Hope you enjoy!
Kimchi Carbonara with Spam
Ingredients
1 pound of spaghetti or bucatini (or your favorite pasta)
Kosher salt (to salt pasta water)
2 tbs extra virgin olive oil
12 ounces of spam (1 can)
2 ounces of shredded or grated parmesan cheese
4 egg yolks
2 eggs
4 ounces of kimchi (cut into smaller pieces)
fresh blacked pepper
crushed red pepper or chili oil (to taste)
(don't forget to add kimchi)
Recipe
Boil pasta following package instructions, saving a 1 1/2 cup of pasta water as pasta nears being done. Strain pasta before completely done.
Dice the spam into little cubes and pan fry in olive oil. As the spam starts to brown, pull the spam off the pan and reserve for a later step.
Add egg yolks, eggs, shredded cheese, and kimchi into a mixing bowl. Add some black pepper. Whisk everything together.
Add cup of pasta water to the pan that you cooked the spam into. Add strained pasta and stir constantly cooking for 2 minutes.
Add 1/4 cup of pasta water to whisked egg mixture stirring slowly as cheese begins to melt. Add remaining pasta water into egg mixture stirring and then slowly add to the cooking pastas continually stirring. Add reserved spam into the pan, mix everything together, and then divide into bowls for serving.
Add shredded parmesan cheese, crushed red pepper, and kimchi as a finishing touch! Enjoy!
