Spicy Korean Pork Belly

This delicious spicy pork belly is about the easiest thing on the planet to make. It's also incredibly versatile. The pork belly is amazing in a rice bowl with some kimchi and veggies and a fried egg  (pictured), in tacos, or in one of the best sammies on the planet (think Korean style banh mi with pickled carrot/daikon, kewpie mayo, and some kimchi). Hope you enjoy!

Spicy Korean Pork Belly

1 pound pork belly (diced into bite sized pieces)
8 garlic cloves (sliced thinly goodfellas style)
Half a medium yellow onion cut into thin slices
1 tablespoon and 1 teaspoon Korean chili flake
4 tablespoons (1/4 cup) soy sauce (or maggi seasoning or tamari)
1 tablespoon and 1 teaspoon sugar
2 green onions (cut into 1 inch pieces)

Throw everything into a hot cast iron skillet or wok and mix all the ingredients as you cook. Cook on high until the meat is cooked through and starts to get caramelized. Told you it was easy! Enjoy!!
