Chimichurri Bros Gaucho Sauce (Traditional and Hatch Green Chile)
Longtime friends and chefs Austin Hume and Forrest Bayne were both laid off from their jobs at Denver restaurants in 2020 during the COVID-19 shutdown. One night, while hanging out in Austin’s basement off Colfax, an idea was born: make the freshest, most flavorful chimichurri sauce ever.
Austin and Forrest set out on a mission, testing dozens of combinations of fresh herbs, spices, and citrus, until they found just the right balance.
Using their federal stimulus checks to fund the project, they began slinging Gaucho Sauce at local farmer’s markets and the rest is chimi-history.
