Ive been making this marinade for decades! after watching folks on Instagram and TikTok making watermelon rind kimchi (rind chi), I made some. I loved it and decided to make more!

i partnered with Feelibg Fresca to use their leftover rinds and will continue making while there are rinds to use!

this is not for everyone. The rind’s texture is not as firm as our Napa kimchi. And as one customer described it, “it’s so sour and pungent. I loved it!” If that sounds like something you can get down with, we recommend trying it!
