I recently discovered that cilantro kimchi has existed in North Korea where cilantro is prevalent. I found a few recipes, tweaked them a bit, and started making Gosu kimchi, the name for cilantro kimchi. It is delicious! I recommend putting this on tacos, rice and rice noodle bowls! This will be made fresh each week and will have a shelf-life of about a week. 

The ingredients are cilantro, daikon radish, Fuji Apple, Green Onions, Ginger, Garlic, Rice Vinegar, Gochugaru, Sesame seeds. Gosh Kimchi is vegan and gluten free.
